Is not the problem here the word “just” as in “just models?” Models, even figures of speech in ordinary language, can be useful for leading to further insight on the nature and relationship of things. But they have to be proven to be truths. We model or symbolist thinkers do not deny that we can achieve truth, e.g. provable models, as you have demonstrated. But truth and truths are not absolute. Even well-grounded, demonstrated beliefs in our ongoing inquiry of the universe and ourselves are still within a larger context that changes and uncertain and contains much that is not, or cannot be, experienced. But that gets us into philosophical waters.
